You have to look for the minigames once you have finished playing RTE mode and then choose the minigame option after buying. This will allow you to access and enjoy the minigames.
However, according to a Reddit post, it is random. You unlock one minigame every playthrough of Road to Elite after your first. For example, after finishing the second playthrough, the user unlocked Shida’s Slugfest, and after the third playthrough, they unlocked Steal the Show.
But there are also complaints that some players did not receive any mini-games even after Road To Elite playthrough.

You begin the career mode with the selected wrestler, or you can also use your custom-made wrestler. In Road to Elite, every wrestler starts their journey in the same way.
They enter the Casino Battle Royale, where the outcome determines their path. Winning the battle will lead them to story block 1B, where they compete for the title of the first AEW Champion.
Losing the battle will take them to block 1A, where they form unexpected partnerships. Female wrestlers have an additional opportunity to enter story block 1C and contend for the Women's Championship.
Then in the 2nd block, your avatar will have a feud with Chris Jericho and The Inner Circle in 2A. In the 2B storyline, you have a chance to unlock Brodie Lee. But first, you have to beat him for the TNT title.
